What Are You Eating Right Now?

Yeah, you....what are you snacking on while you're reading this?  Do you have to munch on something while you are on the computer?  I do.  And it's usually junk food.

I'm a junk food junkie.  Always have been.  You wanna know why I like Easter so much?  The candy....specifically Cadbury cream eggs and the cartons of malted chocolate robin's eggs.  You know, the ones that look so cute but you eat them anyway.  Yeah, them.

Easter candy is one of my favorite "computer munchie foods".  I have to have something to munch on when I blog or drool over Pinterest stuff or online window shop or "creep" on my son's Facebook page.....

I ate a ton of "PMS junk food" over the weekend.  Like this:

That, my friends, is homemade chocolate chip cookies and McD french fries.  Really, really good together.  Trust me.  Try it.  You'll love it!

So after too many "meals" like this, I whipped up one of my favorite munch foods....a somewhat healthy (ha) salad.  I discovered this salad at a wedding shower over a year ago.  I loved it!  I couldn't get the recipe for it so I had to guess what was in it.  I'm pretty sure I got it right.

I eat this salad when I'm on the computer now to make up for my junk food sins this past weekend.

I don't know what the "official" name of this salad is but I just call it the cabbage and Ramen noodle salad.  It works.

Here is my version:

Here is a list (and pic) of what I used:

1 pkg. coleslaw salad mix (chopped raw cabbage)
1 pkg. Ramen noodle soup mix (any flavor)
4 oz. raspberry vinaigrette Salad dressing
     4 oz. mandarin oranges (drained)
     3-4 oz. chopped pecans

Cook the Ramen noodles as directed on the package but do not add the flavoring pack.

Once the Ramen noodles are cooked and cooled off, throw all of the ingredients into a bowl and mixed it up.    Super easy.

How do you like those directions?  You can tell that I cook alot, huh?

The salad at the wedding shower had raspberries, strawberries and walnuts instead of mandarin oranges and pecans.  It was goooood!

I change it up every time I make it.  I usually just end up using what I have.  You can use different fruits, nuts or even salad dressing.

I'll leave you with another really good combo....buttered popcorn and a Snickers candy bar.  Oh, yeah...awesome!  You're welcome :)

  2. Sounds delicious. I am desperate to purge myself of all the junk food in the house, but just can't bring myself around to doing it. Soon, soon. Afterall with the weather the way it is here in Ontario, we'll be wearing shorts soon!

  3. Hi Shasta, I have had a salad similar to this and I loved it also. Got a good laugh out of your computer junk food story. Hubs and I have been trying to eat healthier. Last night I had a party at my house for 20 woman. We served salad bar in a pita. Everyone commented on how good and fresh it tasted. Sometimes going light is a nice change. Of course we had dessert. lol!
    Hugs,
